These beans are special, they are grown on small cocoa farms between the Magdalena River and the western Andes mountain range. There they develop a rich sensory profile, with flavours smooth nutty flavours and a strong citrusy fruitiness.
The organisation Bosques De Cacao Yariguíes focus on they heirloom varieties of their beans and make sure they grow sustainable.
We have direct traded these beans from Miguel Beltran from BelMin in Colombia and we finally got some chocolate ready. Straight from Tolima we bought a 10 kilo bag and started working with them. We've created this superb 75% chocolate.
